SNACKS. LIST EM PLEASE!

Breakfast has been paleo in my house since Eric and I were roomies. Dinner isn’t that hard and a salad with some kind of dead animal sprinkled on it makes lunch not all that challenging either.

That being said, I’m living on almonds and fruit for snacks and as much as I enjoy both of them, I know that in a few weeks that’s going to get old.

Snacks seem to throw most of us for a loop, so if you’ve got a great one that’s been getting you by, please share it in the comments section!

I have been making all kinds of things because I too love nuts and fruit, but am starting to feel like a fruity nut. Root veg chips and either homemade salsa or guac. I tried several recipes and recommend Julia Childs double fry recipe. I found that coconut oil worked best, and all of these were a hit with taste testers: parsnip, rutabega, celery root, beet, sweet potato. I also want to try carrot, but haven't yet. Also have been roasting my own nuts in whatever flavors I am craving. Pecans roasted in cinnamon, nutmeg, vocoa (unsweetened) are great, especially tossed with some coconut when taken out of the oven.

I eat a lot of carrots. A lot of them. You'd think that I'd have good eyesight because of this but, I mean, you've all seen me walk up to the white board 100 times mid-warm up just to figure out how many and of what, I'm supposed to be doing. Anyway, carrots. Experiment with putting them in stuff(edible), like...guacamole, salsa, nut butter. Basically, if it sounds like it could be a weird combination, I try it. I practice the same protocol with bell peppers. Liiiiiightly steamed broccoli as well. I'm not the best at remembering to eat things, so my snacks need to be interesting. My policy is: f*ck conventional food combinations - mix stuff up and see what's good. I also try to look for things that can be smashed up and that I can add herbs/spices to, to make some kind of "dip". For example, carrots. Also, sweet potatoes. Or bananas. In general though, I really try to steer clear of fruit, both dried and raw, mostly because I can't stop eating them and then I get weird and crazed and nihilistic. Berries aren't as much of a problem as THE OTHERS, so I treat them a little more loosely. Nuts, obviously, and on occasion, leaves of iceberg lettuce. I know it's basically devoid of all nutritional value, but it's pretty sweet tasting and you get "insanity" cred from carrying around a head of lettuce all day.

Kale? Isn't that what they fed those british prisoners of war in Bridge over River Quai? I am pretty sure that Steve Mqueen chose a prison rat over some Kale leaves thrown into his cell in Papillon and I am positive that kale is the 'snack' sold as 'Brown 25' in The Kentucky Fried Movie. Kale. I would rather eat broken glass than allow Kale (or boiled okra...brrrrrr) to touch these virgin lips. Kale is snails and puppy dog tales. It is the Grinch, the dark cloud of despair that causes gout and bleeding gums. If God put Chicken on this earth to show his infinite Glory, he put Kale down to remind us of the purgatory that awaits should we deign to follow a righteous path in life. Just say no...to Kale. Aug

I want to try some of that Steve's Original! I love snacking on brussels sprout, kale, or sweet "chips". super easy to make. Cut or tear the kale, peel the brussels sprouts, then thinly slice the harder part in the middle, and thinly slice the a sweet potato. There isn't a need for much oil, sometimes I even just sprinkle a little water or lemon on top. Ive been testing whats been best for baking, and seems to be at a lower temp for a little longer...maybe 300 for 20 min. Just keep an eye. After I sprinkle some garlic salt, pepper or cayanne pepper. You can also bake with sun dried tomatos or prosciutto. mmmm! And don't forget MeeNut Butter with a little cinnamon...my fav!

Steve's Original Coconut Paleo Pack is my go to snack favorite. Otherwise, I just find my snacking looks more like eating mini meals consisting mostly of whatever was leftover from the night before. Just like I needed to shift my traditional view of breakfast consisting of cereal and/or toasted carbs, my view of snacks has changed too.

Steve's Original makes these vacuum packed paleo snacks that are perfect if you are in the office or just need something quick. They last for awhile and I just throw a bunch in my desk drawer. I did this particular Paleo snack W.O.N. last night with Karen out of town. I am a fan. -10 piece El Pollo Loco dark meat special deal-hold the tortillas. -Use the to-go box as the holding pond for their fresh vegetable salsa. Let all the chicken parts swim out to sea in the salsa. (It also cools them sufficiently to prevent mouth blisters when it is time to decimate them. Come up underneath and hit those those parts with the fury of a 20 foot South African Great White in a Seal Rookery. Smoke a cigarette. Sip your water at the end of the snack. Dream of Honey. Dead chicken clucking. Aug

I've been making mini "banana nut muffins" Double this "Almond Banana Pancake" recipe from Mark's Daily Apple: http://www.marksdailyapple.com/almond-banana-pancakes/#axzz22DQ5ERLc Grease a muffin tin with coconut oil and place chopped walnuts or pecans in the bottom of each muffin well. Pour pancake batter in and cook for 15 minutes at 350. I made a batch for Jason P.

I also need snack ideas, hope lots of people post stuff today. I did find lunch meat at Lazy Acres that is purely meat. Been eating it with sundried tomatoes.

Almond Dream Balls 1/2 cup raw almonds 1/4 cup raw walnuts 1/2 cup pitted dates 1/4 cup raw almond butter 1/2 teaspoon almond extract Shredded coconut Coursely chop the almonds and walnuts in a food processor. Add the dates, almond butter, coconut and almond extract and blend until the mixture holds together. Scoop out and form into 1 inch balls. Great snack and hits the sweet tooth need too.
